- ¼ cup Cucumber
- ¼ cup Bell Pepper
- ⅛ cup Carrot
- ⅛ cup White Onion
- 1 tbsp Parsley
- 1 tsp Lemon Thyme
- Salt
- Dash Paprika
- 2 Cloves Garlic OPTIONAL ADD-IN: Test Your Tolerance
Gather all your veggies and herbs: Cucumber, Bell Pepper, Carrot, White Onion, Parsley, and Lemon Thyme.
If you are using a food processor: rough chop all the veggies and herbs.Otherwise, small dice up all the veggies and herbs. Combine the ricotta cheese, veggies, herbs and salt to taste.
OPTIONAL ADD-IN: Test Your Tolerance. If you are testing your tolerance with Garlic then add 2 cloves of minced garlic and mix in with the ricotta, veggie, and herb mix. I love my microplane for mincing garlic. Top with a sprinkle of Parsley and Paprika.
Enjoy with corn chips and a Topo Chico.
