ALL ABOUT THE INGREDIENTS
All the ingredients used in this recipe are truly low histamine and can be found on the TLH YES List.
The SIGHI values below are from the Swiss Interest Group Histamine Intolerance (SIGHI), and a value of 0 means the ingredient is compatible with a low histamine diet.
Rooibos Tea – SIGHI 0
Rooibos Tea is low in histamine. Rooibos Tea, aka Red Tea, is a caffeine-free herbal tea made from the leaves of the Aspalathus linearis shrub, which is native to South Africa. The name “rooibos” comes from Afrikaans and means “red bush. The taste of Rooibos tea is a little sweet and nutty with a slight vanilla woodsy taste.
Suggested Brand: Numi Organic Rooibos
Honey – SIGHI 0
Honey is low in histamine. When choosing a honey, choose raw honey. Raw honey is unfiltered and unheated and boasts potential health benefits over regular honey due to its retained pollen, enzymes, and antioxidants.
Milk- SIGHI 0
Milk is low in histamine. Choose pasteurized milk for this and all low histamine recipes. Pasteurized milk is milk that has been heated to a specific temperature for a set period to kill harmful bacteria and extend shelf life. Pasteurized milk typically has less histamine than raw milk because the pasteurization process kills bacteria that can produce histamine. This process, along with proper storage, helps prevent histamine formation in the milk.
Cloves – SIGHI 0
Cloves are low in histamine. Small quantities of clove are well tolerated which puts this warming sweet spice on the YES list. Cloves are made from the dried flower buds of the clove tree, native to Indonesia. Rich in antioxidants and anti-inflammatory properties, cloves add both flavor and health benefits.

Cinnamon* – SIGHI 0
Try adding a dash of Cinnamon to take this Clove Rooibos Latte up a notch!
Cinnamon has a SIGHI value of 0 and is well tolerated in small amounts. However, there is a discrepancy among the major food lists regarding its compatibility with low-histamine diets, as denoted by the “*”. While personally, I haven’t experienced any issues with cinnamon, I suggest you pay attention to any effects you might feel after using it.
EQUIPMENT USED
- Coffee Mug – Any favorite mug will do, but if you feel like getting bougie, check out an Ember Mug. I am obsessed with mine.
- Frothing Wand – TO froth your milk you can heat the milk on the stove or in a microwave. then use a frother wand. Or you can use a milk steamer.
- Milk Steamer – This is a great option to heat and froth your milk
- Electric Kettel – Because different teas need different water temps to steep, an electric kettle with the ability to heat water to different temperatures is a great option.
HOW TO MAKE CLOVE ROOIBOS LATTE
STEP 1 – Gather all ingredients. Rooibos tea, honey, clove, milk.
STEP 2 – Heat 8 oz of water to 220 degrees in an electric kettle, a pot on the stove, or in a microwaveable container. Roobios is not a tea but rather an herb so the water needs to be at a higher temperature to steep.
STEP 3 – Add the tea bag and 8 OZ of hot water to the mug, Let steep for 5-8 mins. Because Rooibos is an herbal tea, it will need to steep longer. For a stronger brew add 2 tea bags.
STEP 4 – While the tea is steeping, heat and froth your milk. Here are 2 suggested methods:
Method A – Heat your milk in a microwavable container in the microwave or in a pot on the stovetop. Once heated, froth with a frothing wand. If you don’t have a frothing wand you can vigorously mix with a whisk until you get the desired frothyness.
Method B – Use a milk frother to heat and froth your milk. Easy Peasy.
STEP 5 – Add the Honey and cloves to your mug and mix. I like to keep my tea bag in the cup but you can remove it at this point.
STEP 6 – TEST YOUR TOLERANCE: OPTIONAL ADD-IN: Cinnamon
If you are Testing Your Tolerance with the optional add-in: cinnamon, you will add that now.
Read more here about how to test your tolerance.
STEP 6 – Add Frothed milk to the mug of Rooibos tea. Top with a dusting of Clove.
